Healthy Fried Chicken

My mother in law called me the other day and said “Janell, I want to make Grandma’s fried chicken but I know you will not let me feed it to your kids if I do not  make it healthy and gluten free, how can I make this.”  To be honest, my first thought was, there is no way we can make Grandma’s fried chicken healthy AND taste good.  So I began my quest to find others who have tried to make tasty, healthy, fried chicken.  I am not the first to explore this and thankfully, I found numerous recipes to help me experiment and create Grandma’s HEALTHY Fried Chicken.  I made this tonight and my children and my husband went crazy over it, they loved it so much they asked me to make it again this weekend, this recipe will now become a weekly favorite in our home.

Instructions

  • 1. Preheat oven to 325.
  • 2. Wash and dry the chicken.
  • 3. Mix together, coconut flour, tapioca flour, salt and pepper.
  • 4. In a separate bowl, mix together, eggs, milk, salt and pepper.
  • 5. Dip chicken into egg mixture, completely drench.
  • 6. Then dip chicken into flour mixture, completely coat.
  • 7. Heat iron skillet on med heat, add coconut oil.
  • 8. Place coated chicken into warm skillet and cook chicken until browned (about 10 min).
  • 9. Grease glass pan with coconut oil.
  • 10. Place browned chicken breast/pieces into pan and bake for 20 - 25 min at 325 or until completely cooked through.
  • 11. Serve with baked sweet potatoes, kale salad or mix salad, and baked apples. Enjoy!
