Fruit and Energy Bars

These can be frozen and taken out before you leave for work or when packing the children’s lunches.


  • 1. Wash the apricots then chop all the dried fruit together in a food processor.
  • 2. Then add the orange juice, coconut, almonds and grated rind.
  • 3. Press the mixture into a lightly greased (with coconut oil) 8 inch square cake pan, make it about 1/2 inch deep.
  • 4. Sprinkle with additional shredded coconut on top.
  • 5. Chill in the refrigerator for about 1 hr then cut into bars/squares.
