Grainless Carrot Muffins


  • 1. Mix together eggs, bananas, apple sauce/baked apples, carrots, dates, apple cider vinegar and coconut oil in a food processor or vita mix blender. Blend/process till well mixed.
  • 2. In a separate bowl add all dry ingredients together, stir.
  • 3. Gently stir dry ingredients into wet ingredients until well combined.
  • 4. Add either blueberries or Enjoy Life chocolate chips for added flavor.
  • 5. Coat muffin pans or bread pans with coconut oil.
  • 6. Variations: You can remove the coconut flour and instead use 1/4 cup extra almond meal.
