Grain Free Banana Bread Muffins
Ingredients
- 4 1/2 - 5 medium ripe bananas
- 1/8 - 1/4 cup of apple sauce
- 2 organic eggs
- 2 tsp vanilla extract
- 2 tbs of almond butter
- Mix all above ingredients together
- In a separate bowl, mix the follow dry ingredients:
- 1/2 cup coconut flour
- 1 1/4 cup almond meal (see my recipe on how to make almond meal)
- 1tsp of cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
Instructions
- 1. Preheat oven to 350
- 2. Mix the dry ingredients with the wet ingredients, stir till fully combined.
- 3. Grease 2 muffin pans with ample amount of coconut oil.
- 4. Spoon each muffin container about 3/4 full.
- 5. Bake for about 18 mins, after 18 mins check with a tooth pick, if the muffins are slightly brown around the edges and the tooth pick comes out clean, then they are finished.
- 6. Make sure not to over cook, these muffins should be very moist.
- 7. Option 1: My children LOVE it when I add 1/4 - 1/3 cup ENJOY LIFE mini chip chocolate chips to the batter before baking. Warm chocolate chip banana muffins are a huge hit at our house!!
- 8. Option 2: 1/8 cup agave or local raw honey (I personally do not use any sweetener and our muffins are always sweet and perfect)
- 9. Option 3: Add a 1/2 cup peanut butter, decrease almond meal by 1/4 cup and one less banana. This makes the muffins a bit lighter in texture and has added protein.
