Grainless Pumpkin Banana Muffins

Ingredients
- 1 1/4 C Almond Meal
- ΒΌ coconut flour
- 1tsp baking soda
- 1tsp baking powder
- 1 Cup Canned 100% Pumpkin
- 1 ripe banana mashed
- 2 Tbs Honey
- 3 tsp Cinnamon
- 3 cage free eggs
- 1 tsp pure vanilla extract
- 2 Tbs Almond Butter
- Berries OR Enjoy Life Chocolate Chips
Instructions
- 1. Preheat oven to 375 degrees.
- 2. Beat eggs in a medium mixing bowl.
- 3. Add all other wet ingredients to eggs and stir until well combined.
- 4. In a separate bowl mix together almond flour, baking soda and baking powder.
- 5. Add the wet and dry ingredients together.
- 6. Add either berries or Enjoy Life Chocolate Chips. Stir till combined.
- 7. Thoroughly grease muffin tin with coconut oil.
- 8. Divide evenly into muffin pan or small bread loaf pans.
- 9. Bake at 375 for 16-18 minutes.
- 10. Store in the refrigerator. Makes about 12 - 14 muffins
- 11. Variations: You can remove the coconut flour and instead use 1/4 cup extra almond meal
