Grainless Pumpkin Banana Muffins

Instructions

  • 1. Preheat oven to 375 degrees.
  • 2. Beat eggs in a medium mixing bowl.
  • 3. Add all other wet ingredients to eggs and stir until well combined.
  • 4. In a separate bowl mix together almond flour, baking soda and baking powder.
  • 5. Add the wet and dry ingredients together.
  • 6. Add either berries or Enjoy Life Chocolate Chips. Stir till combined.
  • 7. Thoroughly grease muffin tin with coconut oil.
  • 8. Divide evenly into muffin pan or small bread loaf pans.
  • 9. Bake at 375 for 16-18 minutes.
  • 10. Store in the refrigerator. Makes about 12 - 14 muffins
  • 11. Variations: You can remove the coconut flour and instead use 1/4 cup extra almond meal
