Grainless Carrot Muffins

Ingredients
- 2 ripe bananas
- 1/4 cup applesauce or baked apples with the skins removed (see my baked apples recipe for details), if you do not have the baked apples, you can use one extra banana instead
- 3 cage free eggs
- 1 cup pitted dates
- 1 tsp apple cider vinegar
- 1/4 cup coconut oil
- 1 3/4 cups almond meal
- 1/4 coconut flour
- 1 3/4 cups almond meal
- 1/4 coconut flour
- 1 tsp cinnamon
- 2 tsp baking soda
- 1 tsp salt
- 1 1/2 cup shredded carrots
- Optional add in: Raisins, Blueberries or Enjoy Life Chocolate Chips for added flavor
Instructions
- 1. Mix together eggs, bananas, apple sauce/baked apples, carrots, dates, apple cider vinegar and coconut oil in a food processor or vita mix blender. Blend/process till well mixed.
- 2. In a separate bowl add all dry ingredients together, stir.
- 3. Gently stir dry ingredients into wet ingredients until well combined.
- 4. Add either blueberries or Enjoy Life chocolate chips for added flavor.
- 5. Coat muffin pans or bread pans with coconut oil.
- 6. Variations: You can remove the coconut flour and instead use 1/4 cup extra almond meal.
