Mashed Cauliflower “Potatoes”

Everyone hears me talk about the importance of decreasing and eliminating white carbs in our daily diets and replacing them with nutrient rich vegetables.  I have used cauliflower as a substitute for rice, potatoes and other grains when cooking.  Cauliflower is mild in flavor, high in nutrients like vitamin C and very low in calories (1 cup of raw cauliflower has less then 30 calories).
Last night my kids were begging for me to make mashed potatoes.  Naturally, I did not have any potatoes in the house (a food item that I only buy on Thanksgiving), so I decided to make mashed cauliflower instead and see if they noticed a difference.  They did notice that the “mashed potatoes” tasted different but they both like it and asked for second helpings.  It was so quick and easy to make and required such little prep and ingredients that it is a great recipe for busy “throw dinner together in 30 mins” nights.

Instructions

  • 1. Chop and then steam cauliflower until tender. Put cauliflower, butter and seasonings into the food processor and mix until smooth and creamy.
  • 2. You can then eat immediately or bake the cauliflower in the oven for 20 mins at 300 degrees. Enjoy!!!
