Pumpkin Muffins/Bread

Recently a dear family member was diagnosed with an autoimmune disease.  I immediately began my quest to further research and understand foods that trigger inflammation and foods that help decrease inflammation.  Many types of fruits, grains and sugars increase inflammation.  I have been creating many recipes that contain foods that promote a healthy immune system and do not trigger inflammation.  Here is one of our favorites:

Instructions

  • 1. Put all wet ingredients (pumpkin, honey, and eggs) into a food processor and pulse for 2 minutes. Combine all dry ingredients into a bowl, mix together and then add the dry ingredients into the food processor where the wet ingredients are. Pulse for 1 min to combine the wet and dry ingredients.
  • 2. Pour batter into greased (grease with coconut oil) muffin pans OR mini loaf pans Bake at 350 degrees for 20 - 25 mins (check after 15 mins to see how done they are, since each oven and altitude has different baking times).
  • 3. For a bit more sweetness, lightly spread a small amount of honey on the top of your muffin before eating. These are very low in sugar and taste delicious! Enjoy!!
