These can be frozen and taken out before you leave for work or when packing the children’s lunches.

Fruit and Energy Bars
Ingredients
- 1/2 c of dried apricots
- 1 cut of pitted dates
- 1 cup of dried figs
- 2 tbs of orange juice
- 3/4 cup of unsweetened shredded coconut
- 1/2 cup ground almonds, hazelnuts, walnuts or pecans
- grated rind of one orange or lemon
Instructions
- 1. Wash the apricots then chop all the dried fruit together in a food processor.
- 2. Then add the orange juice, coconut, almonds and grated rind.
- 3. Press the mixture into a lightly greased (with coconut oil) 8 inch square cake pan, make it about 1/2 inch deep.
- 4. Sprinkle with additional shredded coconut on top.
- 5. Chill in the refrigerator for about 1 hr then cut into bars/squares.
