Mediterranean Chicken
Ingredients
- 1 lb of organic boneless skinless chicken breast
- 1 16oz container of chopped tomatoes
- 15 black olives chopped
- a can of artichoke hearts, drained
- spices (I prefer basil, oregano, salt and pepper)
Instructions
- 1. Slightly brown chicken with coconut oil in a skillet (preferably an iron skillet)
- 2. Put chicken and all other ingredients into crock pot and slow cook on low heat for 2 or more hours.
- 3. Serve with organic brown rice or quinoa pilaf and a Greek salad
